- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and sugar until light and fluffy, using a hand mixer or stand mixer.
- Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Divide the dough into three equal portions. Leave one portion plain, mix red food coloring into the second portion, and mix blue food coloring into the third portion.
- Scoop small amounts of each colored dough and roll into balls, combining the colors slightly to create a marbled effect.
- Roll the balls in white sprinkles or sugar crystals for a festive touch.
- Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Be careful not to overbake.
- Let the cookies cool on the baking sheets for 2 minutes before transferring them to a wire rack to cool completely.
Notes
For a more vibrant color, use gel food coloring instead of liquid. Store cookies in an airtight container for up to 5 days.
