Method

  1. In a medium bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and sesame oil to make the Bang Bang sauce. Mix well and set aside.
  2. In another bowl, toss the chicken cubes with garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  3. Thread the chicken cubes onto skewers, ensuring each skewer has an even amount of chicken pieces.
  4. Preheat a grill or grill pan over medium-high heat and lightly brush it with vegetable oil to prevent sticking.
  5. Place the chicken skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is fully cooked and slightly charred on the edges.
  6. Once cooked, remove the skewers from the grill and brush generously with the prepared Bang Bang sauce.
  7. Garnish with freshly chopped cilantro if desired, and serve immediately.

Notes

For extra flavor, marinate the chicken in the Bang Bang sauce for 30 minutes before grilling.
