Method
Prepare the base
- In a medium bowl, fold the softened cream cheese or ricotta until smooth. Add grated Parmesan if using.
Dice and drain tomatoes
- Finely dice tomatoes and gently press on a paper towel to remove excess juice.
Mix the tomato basil topping
- In a separate bowl, combine diced tomatoes, minced garlic, sliced basil, red onion, olive oil, balsamic (if using), salt, pepper, and red pepper flakes. Taste and adjust seasoning.
Assemble the dip
- Spoon the creamy base into a shallow serving dish and smooth the top. Layer the tomato basil mixture over the cream base.
Chill briefly (optional)
- Chill the assembled bruschetta dip for 10–20 minutes to let flavors meld, or serve immediately for a fresher flavor.
Notes
Best served cold or at room temperature. For make-ahead hosting, prepare the creamy base and tomato topping separately the night before and combine just before serving.
