Method
 

  1. In a mixing bowl, combine the diced tomatoes, red onion, minced garlic, and fresh basil.
  2. Drizzle the olive oil and balsamic vinegar over the mixture, then season with salt and black pepper.
  3. Mix gently until all ingredients are well combined.
  4. Transfer the mixture to a serving bowl and sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  5. Serve immediately with sliced baguette or crackers for dipping, or refrigerate for up to 1 hour before serving for a chilled option.

Notes

For best results, use fresh, ripe tomatoes and high-quality olive oil. You can substitute basil with parsley if desired.
