Ingredients
  

For the Mocktail Base
  • 1 cup tart cherry juice (unsweetened) Dark cherry juice can be used if tart is unavailable; reduce simple syrup slightly.
  • 1/4 cup simple syrup Alternatively, use 2 tablespoons honey, warmed.
  • 3 tablespoons fresh lime juice About 2 limes.
  • 1 cup sparkling water or club soda, chilled Use additional if a stronger fizz is desired.
  • 1/2 cup cranberry juice Optional, adds color depth.
  • 1/4 cup maraschino cherries Plus extras for garnish.
  • to taste Ice cubes
  • to taste Lime slices and fresh rosemary sprigs For garnish.

Method
 

Preparation
  1. Make the quick cherry syrup by combining cherry juice and simple syrup in a medium saucepan over medium heat. Stir until warmed and slightly reduced, about 5 minutes. Remove from heat and let cool.
  2. Muddle 1/4 cup maraschino cherries in a mixing glass or bowl using a muddler or back of a spoon.
  3. In a pitcher, combine the cooled cherry syrup, cranberry juice (if using), and lime juice. Stir to combine and taste; adjust sweetness or tartness if necessary.
Chill and Serve
  1. Add chilled sparkling water to the pitcher just before serving and stir gently.
  2. Assemble individual glasses by placing ice, spooning muddled cherries, and pouring the mocktail mixture over the ice.
  3. Garnish with lime slices and rosemary sprigs.
  4. For final presentation, skewer a maraschino cherry and add fresh pomegranate arils if desired. Serve immediately.
Storage and Cleanup
  1. Store leftover syrup in an airtight jar in the fridge for up to 7 days.
  2. Clean any used glasses and utensils promptly to avoid sticky residue.

Notes

For a sugar-free version, swap simple syrup for a monk fruit or erythritol syrup. If using frozen cherries, thaw before muddling. Adjust the acidity with lime to enhance the flavor.
