Method
- In a large bowl, whisk together olive oil, lime juice, honey, barbecue sauce, tomato paste, smoked paprika, cumin, garlic powder, chili powder, onion powder, salt, and black pepper until fully combined.
- Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for maximum flavor).
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.
- Preheat your grill or grill pan to medium-high heat and lightly oil the grates to prevent sticking.
- Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
- Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred. The internal temperature of the chicken should reach 165°F (74°C).
- Remove the skewers from the grill and let them rest for 2-3 minutes before serving.
- Garnish with chopped fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
Notes
For extra flavor, marinate the chicken overnight. You can substitute fresh parsley for cilantro if desired.
