Method
- Preheat your oven to 350°F (175°C).
- Roll out the sugar cookie dough onto a greased or parchment-lined rectangular baking sheet to form the crust. Press evenly to cover the entire pan.
- Bake the cookie dough for 12-14 minutes, or until lightly golden. Remove from the oven and allow it to cool completely.
- While the crust is cooling, prepare the cream cheese topping. In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
- Spread the cream cheese mixture evenly over the cooled cookie crust.
- Wash and prepare the fruit. Slice strawberries and bananas, and toss the bananas with lemon juice if desired to prevent browning.
- Decorate the fruit pizza to resemble an American flag. Arrange blueberries in the top left corner to represent the stars. Use the sliced strawberries and bananas to create alternating red and white stripes across the rest of the pizza.
- Chill the fruit pizza in the refrigerator for at least 30 minutes before serving to allow the cream cheese topping to set.
- Slice into squares or rectangles and serve!
Notes
For best results, serve the fruit pizza within a few hours of preparation to keep the fruit fresh. You can substitute other fruits like raspberries or blackberries if desired.
