  • 1 lb ground beef (80/20 for best flavor) Use lean beef for less grease.
  • 1 medium onion, finely chopped Adds flavor.

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk To mix with soup.
  • 1 cup frozen mixed vegetables (carrots, peas, corn) Frozen is easy and convenient.
  • 2 cups shredded cheddar cheese For cheesy topping.
  • 1 tsp Worcestershire sauce Enhances savory flavor.
  • 1 tsp dried thyme Adds herby flavor.
  • 1 tsp kosher salt Adjust to taste.
  • 1/2 tsp freshly ground black pepper For seasoning.
  • 1 bag (32 oz) frozen tater tots
  • 1 tbsp olive oil or butter for skillet For cooking beef.

Method
 

Preparation
  1. Preheat oven to 400°F and grease the baking dish lightly with oil or nonstick spray.
Cooking the Beef
  1. Warm the skillet over medium-high heat with 1 tbsp olive oil. Add the chopped onion and cook for 3-4 minutes until translucent.
  2. Add the ground beef and cook, breaking it up with a spoon, until no pink remains - about 6-8 minutes. Drain excess fat if necessary.
  3. Stir in minced garlic, Worcestershire sauce, thyme, salt, and pepper. Cook for 1 minute until fragrant.
Make the Filling
  1. Reduce heat to medium. Stir in the cream of mushroom soup and 1/2 cup milk until smooth.
  2. Add the frozen mixed vegetables and 1 cup of shredded cheddar cheese. Cook for 2-3 minutes to heat through and melt cheese slightly. Taste and adjust seasoning.
Assemble the Casserole
  1. Transfer the beef and vegetable mixture into the prepared 9x13 dish, spreading it into an even layer.
  2. Sprinkle a thin layer of the remaining cheddar cheese over the filling.
  3. Arrange frozen tater tots in a single, even layer across the top so they touch.
Bake the Casserole
  1. Place the casserole in the preheated oven and bake for 25-30 minutes, until the tots are golden brown and the filling is bubbling along the edges.
  2. For an extra-crispy finish, switch the oven to broil for 1-2 minutes at the end, watching closely.
Rest and Serve
  1. Let the casserole rest for 5 minutes after removing from the oven. Garnish with chopped fresh parsley if desired, then scoop and serve warm.

Notes

This casserole is flexible; you can use ground turkey or add more vegetables. Make-ahead by preparing it up to Step 3 a day ahead, then bake.
